COOKIES!

My house smells delectable! I have been craving ginger snaps for days now. Found this quick, easy highbrow recipe on Allrecipes.com.

(For those of you following sadistic diets like myself, the shortening can be replaced by applesauce, the all-purpose flour with whole grain spelt flour and the sugar can be reduced. They still taste delicious!)

INGREDIENTS

3/4 cup shortening
1 cup sugar
1/4 cup light molasses
1 egg
2 cups all-purpose flour
2 teaspoon ground ginger
2 teaspoon ground cinnamon
2 teaspoons baking soda
1/2 teaspoon salt


DIRECTIONS

1. Cream together shortening and sugar, add egg and beat until fluffy. Stir in molasses and mix well.
2. Sift all dry ingredients-twice, then add to molasses mixture and mix well
3. Using a cookie scoop or spoon scoop out spoonfuls of dough and form into round balls. Roll tops of balls in sugar. ***note: if you have replaced the shortening with applesauce the batter will be runnier. just drop tablespoon fulls onto a greased cookie sheet.
4. Place the round balls on a cookie sheet, these cookies flatten as they bake.
5. Bake for exactly 9 minutes in a preheated 350 degree (175 degree C) oven. Remove from baking sheet and cool.

Have you seen Dooce's diet posts? Remarkably like your recent ones. Also, what packaging does "light molasses" come in? Is it a syrup? Is it a paste? Is it a bird? Is it a plane?

...the cookies look really good, but I'd still go for the frieten if I were on your diet!

Molasses is a syrup made from raw sugar. It's sweet, but has a dark, slightly bitter flavor. It's a great source of iron and is what gives cornbread, baked beans and ginger snaps their distinct flavor. Believe it or not I bought mine in Delhaize, squeezed between the marshmellow fluff and mexican taco kits! ;-) You don't need much of it in recipes, but the good thing is that it keeps FOREVER!

Funny that you mentioned Dooce's diet posts-- I just went and read them (and Oprah's) and it's pretty much exactly the diet I'm following. Except I have to do it for the next 21+ years instead of just 21 days. blech.

Actually it's not all that bad, but sometimes I get a craving for four cheese pizza and pound cake.... Mmmmmmm! Butter....

I use lowfat buttermilk sometimes instead of shortening. I like the texture better than applesauce. Are you vegan, though, or just vegetarian?

I'm more or less vegan. I had to give up all dairy anyway and have decided to try and avoid eggs as well.

Every now and then I'll use them in a recipe like this one, but other than that I've decided to go cold turkey and see how it goes...
